Balcony Pick-Nik!

In Italy we use to pick-nik the monday after easter. This year I will do it on my balcony, in a simple way, for celebrate the colors of the springs and the joy of the specials moments. Three recipes and tutorials : Simple Carrot's Cupcakes, Alto Adige Sweet Bread (north Italy region sweet easter bread) and easter eggs!

Simple Carrot's Cupcakes

Carrots Cupcakes with simple lemon frosting and marzipan filling.

about 20 cupcakes, 20 min. baking time

  • 15 gr. of bicarbonate
  • 1 pinch of salt
  • 2 teaspoon of cinnamon
  • half teaspoon of grated nutmeg
  • 4 eggs
  • 16 gr. of baking powder
  • 300 gr. of plain flour
  • 350 gr. of brown sugar
  • 450 gr. of grated carrots
  • 250 ml of sunflower oil
For the filling:
  • marzipan
For the frosting:
  • 125 gr. icing sugar
  • 15 gr. of yolk (about 2 medium yolk)
  • 15 gr. lemon juice, filtered
For the decoration:
  • food colors: orange and green
  • marzipan (1 stick)
Preparation, fill & decoration:

  • Preheat the owen at 180°C
  • Peel and grate the carrots, set aside
  • Put brown sugar and the sunflower oil in a mixer bowl and mix well
  • continue beating, add the eggs until you reach a soft and clear mixture
  • Mix the flour, baking powder, baking soda, spices powder and sift
  • add in three times at the mixture and mix until you obtain a creamy, smooth and uniform mixture The best Cake Craft can be found here
  • stop the mixer and grab a spoon
  • gently add the peeled carrots to the mixture
  • fill the cupcakes cup
  • bake for about 20 minutes
  • remove from oven and cool down the cupcakes
    (when the cupcakes are already cool down, one by one, make a hole in the middle)
    prepare the frosting:
    - put in the mixer the eggs, the icing sugar and the lemon juice
    - mix at high speed until you reach a firm consistency

  • get the marzipan stick and the food colors (orange and gree)
  • add one-two drops of food color at the marzipan stick ( you will need 80% of the stick orange, the remaining green)
  • put aside some marzipan for filling the cupcakes, with the remaining: shape the decorative carrots (check the photos >C)
  • fill the cupcakes with the orange marzipan (check photos >B)
  • spread the frosting cream on top of the cupcakes
  • decorate with the carrots marzipan

>Easter Eggs
how to colors your eggs with food colors or in a natural way

The are two way to colors your eggs for springs! Using the food colors (like I did), for a  more brights colors result or the second way: more natural, using vegetable & fruits to add colors to your eggs. This way give more pastel and really organic look! :)

> 1) Color your eggs with gel food colors:
you need: white eggs, several food colors (like AmeriColor), water (room temperature) and white vinegar, several bowl as much your colors. To boil eggs: a bowl of water and ice, a pan, water.

Boil the eggs
For the best results, and if you wont the yolk be well done, no brake eggshell first:
- boil the water
- with a pin make a small hole on eggshell
- dip the eggs on the boiled water
- boil for 8 minuts (maximum 10 minutes) - if you boil more than 10 minutes the yolk turn green!
- put into the ice water (stop the cooking process)

Now you have the perfect boiled eggs! :) 
You can proceed with the fun part! :)

- I chose 6 colors: purple, orange, turquoise, deep pink, green and yellow!
- for each colors one bowl with water, a pinch of food color gel and two-three drops of white vinegar.
- dip the eggs and left there until you reach the desired color tone!

> 2) Color your eggs with vegetable - natural way:
You need: a pan for each color, boil water, white eggs, vinegar, vegetable or fruits.
boil the eggs with the same procedure (1) but add the vinegar, and the vegetable corresponding the colors you choose:

RED/PINK: grated beets or chopped cranberries or chopped frozen cherries.
BLUE/PURPLE: chopped frozen blueberry or chopped red chabbage or red onion skin.
YELLOWS: brown onion skin or saffron or orange lemon peels.
GREENS: chopped spinach
BROWN: Instant Coffee
ORANGE: carrots or paprika

- place in refrigerator!
